Superfood Massaged Kale Salad
Green veggies are the foods most missing from our modern American diets. This recipe is an delicious way to incorporate them into meals. Dark leafy greens are high in calcium, magnesium, iron, potassium, phosphorous, zinc and vitamins A, C, E and K, as well as other micronutrients and phyto-chemicals that can boost your health.
Dark leafy greens are linked to benefits such as: improved circulation and blood purification, strengthened immune system, improved liver, gall bladder and kidney function, and the promotion of healthy intestinal flora. Do note however, that if you are struggling with a compromised gut, raw food may not be the best option while you're trying to heal. - 2 bunches organic Dino Kale (stems removed, washed)
- 2 tbs Extra Virgin Olive Oil
- Juice of 1 lemon
- about 1/2 tsp Himalayan salt
- 1 cup cherry tomatoes (sliced)
- 1/4 to 1/2 cup in a proportion of your choosing: toasted pine nuts & toasted pumpkin seeds
- 1/8 cup in a proportion of your choosing: toasted sesame seeds, chia seeds & hemp seeds
- 1/8 cup goji berries
- 1/4 - 1/2 onion, diced
- 2 tbs GF tamari or Braggs Liquid Aminos (smilar to soy sauce)
- 1 tbs maple syrup
- black pepper to taste
Slice kale leaves into small ribbons (this is easy to do if you roll up the leaves, then slice). Place in mixing bowl with EVOO, lemon juice and salt. Mix up and massage with your hands for about 5 minutes to break down the stiff leaves - the salad will shrink to almost half it's size. Add all of the remaining ingredients and stir it up!
You don't have to have all of these superfoods on hand in order to make a yummy salad. Mix and match to see what works best for you!
This is a quick, delicious meal - perfect for picnics and potlucks. I love the refreshing taste of the lemon dressing, and the spiraled zucchini has the texture of pasta al dente, but instead is a nutrition boost of veggies!
